Low Carbing with my Diabetic Dad
My Dad is Jerry Kinder he is 69 yrs old and has Type2 diabetes he lives in W.Va. He and my Mom came to visit me at Christmas and my Dad at that time was taking 3 40-unit insulin shots a day and even with that his blood sugar was through the roof sometimes as high as 350 to 400. He went back home to W.Va and still could not get his blood sugar under control. He felt so bad all the time his feet and legs were swollen and he was having a hard time doing the things he loves to do like golfing, fishing, and four wheeling. I went to visit them on April 17th (my Moms birthday) and while I was there I put both my parents on this program. I cleaned out their pantry and refrigerator and went with my Mom grocery shopping for all the things they needed to get started. When I left there on Sunday they were ready to start. My parents have been on many diets over the years the latest one was the Weigh Watchers Diet. They liked the diet but as with most diets they felt deprived and hungry all the time so it failed. My Dad had told me and my Mom that this was the last “diet” he was going to try. He said if this diet didn’t work he was going to give up and just wait for his time to come and he felt at the rate he was going that would not be long. So in I come with the last “diet” for my Dad…it was up to me to save my Dad. What a responsibility! But I did it….my brother told me I was his hero because my Dad feels like a new man. In just 3 months my Dad is down to 1 20-unit insulin shot every couple of days and his goal is to come off completely. He has lost 50lbs he says his feet and legs have not been so small in years. He says he feels so good and has so much energy that he will never quit eating this way. Notice I didn’t say he would not go off his “diet” because he will tell you real quick this is not a diet but this is his lifestyle for life. I have so much more to tell everyone and I will continue writing about things as long as I have something to write. I want to tell you about my Dads Dr’s reports and the next big story is about my Mom who has high cholesterol issues and how this diet is affecting her.
